Nourishing Quinoa Beets And Kale Bowls (Vegan & Gluten Free!)

These healthy quinoa beets bowls are perfect for a quick and easy meal! They take under 30 minutes to make, and they're loaded with nutrients. Plus, this recipe is completely vegan and gluten free!

Ingredients
  

  • 3 large red beets diced
  • 2 cups quinoa cooked
  • 1 bunch kale
  • 0.15 oz fresh thyme de-stemmed
  • 2 Tb avocado oil
  • ½ teaspoon salt or to taste
  • ½ teaspoon pepper or to taste

Instructions
 

  • Start by preheating the oven to 450 F and lining a sheet pan with parchment paper.
  • Cook quinoa as per package instructions. You can do so in a rice cooker or in a covered pot on stovetop.
  • Peel and dice the beets. Then in a mixing bowl, mix with oil, seasoning, and de-stemmed thyme.
  • Spread seasoned beets evenly on the sheet pan and bake for 18-20 minutes.
  • De-stem the kale and cut the stem into 1 inch pieces. Cut the kale leaves into large 4 inch pieces. Keep separate.
  • Once the water is boiling, add the kale stems and blanch for 1 minute before adding the leaves.
  • Then add the kale leaves and blanch all for another minute. Remove from water and set aside.
  • Once the quinoa, kale, and beets are all cooked, begin assembling the bowls. Just combine in a large salad bowl and mix. Serve and enjoy!
