Healthy Paleo Collard Green Spring Rolls

This yummy veggie spring rolls recipe is vegetarian, paleo, and gluten-free but can be customized to fit just about any diet. It's perfectly healthy, crunchy, and delicious!

For the wrap:

  • 8 large collard green leaves
  • 1 cup carrot, grated
  • 1 cup cucumber, julienned
  • 1 medium yellow bell pepper
  • 1 bunch mint leaves

For the toasted sesame oil sauce:

  • 3 tablespoons olive oil
  • cup rice vinegar
  • 1 tablespoon maple syrup (or honey)
  • ¼ teaspoon toasted sesame oil
  • 1 pinch salt

For the spicy coconut:

  • ¼ cup chili pepper, finely chopped
  • cup fresh coconut shreds
  • ¼ cup cilantro leaves, finely chopped
  • medium onion, finely chopped
  • ½ clove garlic
  • ¼ cup olive oil
  • ½ teaspoon salt


To make the toasted sesame oil sauce:

  • Add all ingredients to a bowl and mix well until combined to a smooth consistency.

To make the spicy coconut sauce:

  • Add all ingredients except for the coconut shreds and blend until smooth.
  • Transfer to a serving bowl, add shredded coconut and mix it together.

For the collard greens spring rolls:

  • Bring water to a boil in a kettle or a saucepan.
  • As you wait for the water to boil, start removing the stem bottoms attached to the collard green leaves.
  • Pour the boiled water onto the leaves for 15 seconds until they turn greener and softer. Pat dry each leaf with a paper towel or a clean dish cloth.
  • Lay the collard leaf flat on a dry surface or chopping board. Add small portions of carrots, cucumbers, yellow bell peppers, and some mint leaves at the center.
  • Fold the sides and roll the collard green leaf upwards to form a neat roll shape.
  • Slice in half and serve with sauces. Enjoy!
