Almond Flour Pancakes With Mixed Berries

These keto almond flour pancakes made with cream cheese is the perfect easy, low carb, and gluten free breakfast. They are flavorful, fluffy, and melt in your mouth! Delicious!

Ingredients
  

  • 4 eggs
  • 1 ½ cup almond flour
  • 1 teaspoon baking powder
  • 2 tablespoons stevia (or other keto sweetener)
  • 4 oz cream cheese
  • 2 tablespoons butter
  • ½ cup fresh blueberries
  • ½ cup fresh strawberries
  • mint leaves for garnish
  • 2 tablespoons sugar-free syrup to drizzle

Instructions
 

This recipe makes 18 pancakes

  • In a bowl whisk the eggs with stevia and baking powder. The more air you whisk into them, the fluffier your pancakes will be.
  • Add almond flour and cream cheese, whisk together until well combined.
  • Heat a skillet and melt a piece of butter.
  • Pour 3 tablespoon batter to form each pancake. 
  • Cook pancakes over medium-low heat until the edges have set and the batter starts forming little bubbles, approximately 2 minutes, then use a spatula to carefully flip them and cook on the second side for 30-60 seconds. Repeat this process for the rest of the pancakes until the batter is gone.
  • Serve with fresh berries, mint and sugar free syrup. Enjoy!

Notes

  • The cream cheese helps these almond flour pancakes from being too dry, don't omit it!
  • If you don't like your pancakes crisp on the outside then flip them in less time or slightly lower the heat.
  • Pancake batter can be stored in the fridge in an airtight container for 3-4 days.
