Healthy Baked Falafels (Vegan, Gluten Free, & Oil-Free)

These healthy baked falafels are vegan, gluten free, and oil-free. They are made with chickpeas, onion, garlic, parsley, dill, and spices. Each bite is so delicious and packed with flavor! Eat it as is or make them into a nutritious falafel wrap, pita, or bowl.

Ingredients
  

  • 2 cups chickpeas, soaked overnight, then boiled
  • 1 chili pepper
  • 1 medium onion
  • 3 cloves garlic
  • ½ cup fresh dill
  • ½ cup fresh parsley
  • ½ tablespoon baking powder
  • 1 teaspoon ground black pepper
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1 teaspoon salt

Instructions
 

  • Soak the chickpeas in water and place in the fridge overnight. The following day, boil the chickpeas on the stovetop until soft. Once cooked, drain, and set it aside to cool.
  • Preheat the oven to 360ºF. Line a large baking sheet with parchment paper.
  • Add the chickpeas to the food processor and pulse 4-5 times. Add all of the spices, herbs, and baking powder then blitz until combined but not too smooth (you want the falafel to have some texture, rather than being the consistency of hummus).
  • Form balls from falafel mixture with your hands. It helps to have wet hands as you form the patties.
  • Arrange the balls on the baking sheet and place into the oven. Bake for 25-30 minutes until golden and crisp.
  • Serve with pita bread, tahini sauce, tzatziki sauce, and sliced cucumber. Enjoy!

Notes

  • This recipe is vegan, vegetarian, and gluten free.
  • If it's hard to form the balls because they are too dry, add a little olive oil to the falafel mixture.
  • Store leftover falafels in an airtight container in the fridge for up to 3 days.
