Ingredients
Made with frozen pineapple, banana, coconut cream, and flax seed, this smoothie bowl is full of fiber, antioxidants, and healthy fats. It's filling and a great way to get an energy boost for the day!
- Banana
- Pineapple
- Coconut Cream
- Flax Seed
- Oat Milk
See recipe card for quantities.
Instructions
- Start by freezing the banana and pineapple. Then stick the canned coconut milk in the fridge to help thicken it up. This ensures the smoothie bowls are extra thick and creamy.
- Once everything is frozen, gather your smoothie ingredients and blend it in a high speed blender, until smooth, for about 45 seconds.
- Pour the smoothie into two bowls and add some fresh fruit and your favorite toppings. Top with coconut flakes and chia seeds. Enjoy!
Substitutions
If you don't have all of the ingredients, no worries! You can still enjoy these Pina Colada smoothie bowls with a few simple swaps.
- Canned Coconut Milk - if you don't have canned coconut milk, you can use canned coconut cream or the refrigerated boxed coconut milk. You can also double up the oat milk instead and just blend in some coconut flakes or fresh coconut meat!
- Flax Seed - you can use chia seeds instead which is a great source of antioxidants, fiber, and omega-3's.
- Oat Milk - don't have oat milk? Use your favorite plant-based milk like almond milk, hemp milk, macadamia milk, etc.
This recipe is vegan, gluten free, and refined sugar free as is. This may change depending on the swaps you make.
Variations
Top with your favorite fruits or nuts for a little extra flavor and texture. I like to use fresh fruit and granola, but you can use whatever you like or have on hand. Get creative with it!
- Fresh Fruit - top with mango, strawberries, kiwi, or bananas
- Yogurt - use dairy-free yogurt instead of oat milk to make it even creamier
- Protein - add some protein powder for an added boost of energy
Equipment
Use a quality high speed blender to help get it perfectly smooth and give it a nice even blend. I use and highly recommend a Vitamix blender. It makes it perfect every time!
Storage
I recommend enjoying these smoothie bowls fresh but you can always freeze leftovers in an air tight freezer safe container to enjoy at a later time. You will just have to thaw before eating.
