Hi sweet potato toast lovers! I'm back with another breakfast recipe. This one is a nutritious sweet potato toast recipe that will leave you feeling full, satisfied, and energized to take on the day. The best part? It only takes about 30 minutes to make! All it really requires is you to gather and cut up the toppings of your choice, roast your sweet potatoes, and then create your masterpiece.
The delicious sweetness of the potato combined with salty pairings like eggs, hummus, or kale brings a bittersweet flavor and umami to the toasts. Fruits combined with roasted sweet potatoes are perfect for breakfast or brunch, as they have a light flavor and go well with juices or milk. Who could say no to this yummy idea?

Ingredients
For the baked sweet potato
- 1 large sweet potato
- salt and pepper to taste
- cooking spray

- strawberry, red grapes, paleo ricotta cheese, and coconut shreds
- almond butter, pears, and honey
- fried egg, kale and cherry tomatoes
- paleo hummus, cucumber, lemon drops
How to make sweet potato toasts
Baked sweet potato toast
- Preheat the oven at 350 degrees F.
- If you like the potatoes with skin, wash it well under running water to wash away dirt, otherwise, peel it.
- Slice the sweet potato lengthwise, making slices ¼" thick and season with salt and pepper to your liking.
- Lightly brush the slices with oil or spray with cooking spray and place them into a wire rack on a baking sheet for best results. If you don't have a rack, line the baking sheet with parchment paper.
- Bake for 15-20 minutes until potatoes are fork-tender but not too soft. If cooking without the wire rack, turn the potatoes once halfway while cooking.
- Remove from the oven and let it cool on the wire rack or on the baking sheet.
To make the toppings
- Strawberries and red grapes: Cut fruits into half lengthwise. Spread paleo ricotta into the sweet potato slice and scatter the fruit pieces onto the toast. Sprinkle coconut shreds on top.
- Almond butter, pears, and honey: Cut the pears into thin slices, remove the tips and seeds. Add a layer of almond butter to the toast and top with pears and a drizzle of honey.
- Fried egg with kale: Cut kale into small pieces and tomatoes in half. Add them to a nonstick skillet with, season with salt and pepper, and sauté for 3 minutes or until tomatoes are golden brown and kale is wilted. Fry the egg into the same skillet with salt, pepper, ½ tablespoon olive oil at medium heat, covered, for 3 minutes. Add the tomatoes and kale to the sweet potato slice and top with the egg.
- Cucumber hummus: Slice the cucumber into thin slices. Add a thick layer of paleo hummus to the toast and top with cucumber, salt, pepper, and lemon drops.
Tips For Success
Don't cut the the sweet potato toast too thin or it won't hold properly. You also don't want to over cook your toast making them too soft. You want to be able to hold your toast with toppings on it.
If you're short on time, feel free to use your toaster! Stick them in for 2 minutes and flip them upside down and toast them for another 2 minutes. Do a prick test with the fork to see how tender they are.
Storage
Sweet potato slices will keep in the refrigerator for 3-5 days in an air-tight container.
To reheat them, it's best to toast them in the toaster since it helps make them a bit more sturdy.
You can also microwave them for around 15 seconds. Keep in mind they will be very soft and might fall apart when you put on the toppings. That's no problem, just eat them with a fork instead.
How to use leftovers:
If you want to use leftover sweet potatoes for something other than toast, it's really easy to transform them into something else. Since the potatoes are already roasted and soft, you can peel off the skin, if you left it on, dice the potatoes and add them to another dish.
